This is for sure for sure a family favorite! Rich spiced and decadently creamy this labor intensive dish is worth every second. Shredded roasted chicken, peppers, onions, cream, CHEESE, spice…these enchiladas are tasty with rice and beans, guac, sour cream, all the good things.
Bake from frozen. Preheat the oven to 425 f. Tent lid of pan or loosely cover with foil. Bake on a foil lined baking sheet for stability for 40-45 minutes. Uncover and bake an additional 10-15 minutes to toast the top. Delicious with sour cream and guac!
